Peach Cobbler Glazed Pork Loin

Pork and peaches already get along. The jelly adds cinnamon, vanilla and a slow burn from Reapers we grew ourselves, so this tastes like the end of summer. Sear it, roast it, and glaze it twice at the end.

Carolina Peach Cobbler

Roasted peach caramelizes on the crust, the cinnamon and vanilla soften the pork, and the Reaper keeps it from tasting like dessert.

Method

  1. Season it earlyPat the loin dry. Mix the salt, pepper, paprika and garlic powder and rub it over every side. Let it sit 30 minutes on the counter, or uncovered in the fridge overnight.
  2. SearHeat the oven to 400°F. Brown the loin in the oil in an oven-safe skillet over medium-high, about 3 minutes a side, fat side first.
  3. RoastTurn it fat side up and roast 25 minutes.
  4. Make the glazeWarm the jelly, Dijon, vinegar and salt in a small pan until the jelly melts loose. Off the heat, swirl in the butter. Save a quarter of it for the table.
  5. Glaze twiceBrush it on thick and roast 8 minutes. Brush again and roast until the center reads 145°F, usually 5 to 10 minutes more. Tent with foil if the edges get too dark.
  6. Rest and sliceRest 10 minutes. Slice ½ inch thick and spoon the pan juices and the saved glaze over the top.

How each jar does on pork

I built this around one jar, but most of the shelf works. Some just work better.
